Ingredients

  • 1/3 cup fresh lemon juice (2-3 lemons)
  • 2/3 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Jar Method:

  1. Add lemon juice, Dijon mustard, minced garlic, honey, salt, and pepper to jar
  2. Shake to combine (10 seconds)
  3. Add olive oil
  4. Shake vigorously 30-45 seconds until emulsified
  5. Taste and adjust seasonings
  6. Use immediately or refrigerate

Whisk Method:

  1. Whisk lemon juice, mustard, garlic, honey, salt, pepper in bowl
  2. While whisking constantly, slowly drizzle in olive oil
  3. Continue whisking until emulsified (2-3 minutes)
  4. Taste and adjust
  5. Transfer to jar for storage

Notes

  • Always use fresh lemon juice, never bottled
