Ingredients

Cookies:

  • 2 cups all-purpose flour
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 6 tbsp butter, softened
  • ¾ cup sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • ¾ cup buttermilk
  • 1-2 tbsp red gel food coloring
  • 1 tsp white vinegar

Filling:

  • 8 oz cream cheese, softened
  • ¼ cup butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Preheat oven to 350°F; line two baking sheets with parchment
  • Whisk flour, cocoa, baking soda, and salt; set aside
  • Cream butter and sugar 2-3 minutes until fluffy
  • Add egg, vanilla, and food coloring; beat until combined
  • Mix buttermilk and vinegar together
  • Alternate adding dry ingredients and buttermilk mixture in batches
  • Pipe or scoop 2-tablespoon portions onto prepared sheets
  • Bake 10-12 minutes, rotating pans halfway through
  • Cool on pans 5 minutes, then completely on racks
  • Beat cream cheese and butter until fluffy; add sugar, vanilla, salt
  • Pipe filling onto half the cookies; top with remaining cookies

Notes

  • Use gel food coloring for vibrant red color
  • Don’t overbake—cookies should be soft, not firm
  • Cool cookies completely before filling
