Ground beef is simmered in a tangy-sweet sloppy joe sauce with vegetables, layered with pasta or biscuits and plenty of melted cheese, then baked until golden and bubbly. Ingredients

Sloppy Joe Filling:

  • 2 pounds ground beef (80/20)
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (6 oz) tomato paste
  • ½ cup ketchup
  • ⅓ cup brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)

Base (choose one):

  • 3 cups cooked pasta (elbow macaroni or shells)
  • 1 can (16 oz) refrigerated biscuits, quartered
  • 3 cups tater tots or hash browns
  • 2 cups cooked rice

Cheese:

  • 3 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  • In a large skillet over medium-high heat, brown ground beef for 5-7 minutes, breaking it apart as it cooks.
  • Add onion and bell pepper, cook 4-5 minutes until softened. Add garlic, cook 1 minute.
  • Drain most of the fat, leaving about 2 tablespoons.
  • Add tomato sauce, tomato paste, ketchup, brown sugar, Worcestershire, mustard, vinegar, and all spices. Stir well.
  • Simmer 10-15 minutes until thickened. Taste and adjust seasonings.
  • Mix cooked pasta (or chosen base) into the sloppy joe mixture, or layer in baking dish: base on bottom, half the cheese, sloppy joe mixture, remaining cheese on top.
  • Cover with foil and bake 20 minutes. Uncover and bake 15-20 minutes more until bubbly and golden.
  • Let rest 5-10 minutes before serving.

  • Use 80/20 ground beef for best flavor and moisture
  • Cook pasta only to al dente—it continues cooking in the oven
  • Make sauce quite thick; it will release moisture while baking
