Ingredients

  • 1½ pounds ground beef (80/20)
  • 1½ teaspoons kosher salt
  • 1 teaspoon black pepper
  • 4-8 slices American cheese
  • 4 hamburger buns
  • 2 tablespoons butter
  • Lettuce, tomato, onion, pickles
  • Condiments of choice
  • Neutral oil for cooking

Instructions

  • Divide beef into 3-4 oz portions and form into loose balls
  • Heat cast-iron skillet or griddle over high heat for 3-4 minutes
  • Season beef balls with salt and pepper
  • Place beef ball on hot griddle, cover with parchment, and smash flat
  • Cook undisturbed for 2 minutes until crispy crust forms
  • Flip, add cheese, and cook 1-2 minutes more
