Chickpea Salad

This fresh, flavorful Chickpea Salad combines protein-rich chickpeas with crisp vegetables and a tangy lemon-herb dressing. Ingredients

Salad:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely diced
  • 1 bell pepper, diced
  • ½ cup fresh parsley, chopped
  • ⅓ cup Kalamata olives, halved (optional)
  • ½ cup feta cheese, crumbled (optional)

Lemon Herb Dressing:

  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Prep chickpeas: Drain and rinse chickpeas thoroughly. Pat dry with towels.
  • Chop vegetables: Dice cucumber, halve tomatoes, finely dice onion, dice bell pepper, chop parsley, halve olives if using.
  • Make dressing: In jar or bowl, combine olive oil, lemon juice, garlic, mustard, oregano, cumin, salt, and pepper. Shake or whisk vigorously until emulsified.
  • Combine: In large bowl, combine chickpeas and all vegetables. Pour dressing over salad and toss thoroughly to coat.
  • Rest: Let sit at room temperature 10 minutes minimum, or refrigerate 1+ hours for best flavor. Taste and adjust seasoning before serving.
